BLT SANDWICH WITH CANDIED BACON + CHIPOTLE MAYO

I consider a BLT sandwich a classic american deli lunch. The fatty salty bacon, juicy tomato, and crunchy lettuce is a simple yet delightful combination. I love to take the classics and put a little twist on them. This BLT with candied bacon, chipotle mayo, roasted onions and blistered tomatoes is just that. The sweetness of the candied bacon and the spice of the chipotle mayo are the perfect complement to one another. The burst from the blistered tomatoes is the cherry on top. This sandwich is my spin on a classic and I promise after you give it a taste, you’ll never think of a BLT in the same way ever again.

CANDIED BACON BLT SANDWICH

Makes: 3 sandwiches

prep time: 15 minutes

total time: 45 minutes – 1 hour

INGREDIENTS:

For sandwich:
10 pieces candied bacon (see recipe)
6 pieces Sourdough bread
1 head artisan green lettuce

For fried egg:
3 eggs
1 tbs butter

For roasted sweet onions and blistered tomatoes:
2 tbs extra virgin olive oil
1 medium sweet onion, cut in thin rounds
3/4 cup cherry tomatoes
1/2 tsp kosher salt
1/2 tsp pepper

For chipotle mayo:
1/2 cup mayo
1 can chipotles in adobo (use 3 tbs)
1/2 lime, juice of
1 pinch kosher salt
1 dash cayenne pepper

DIRECTIONS:

For mayo:
Put can of chipotles in blender and blend till smooth. Set aside 3 tbs in a small bowl and add the rest of the mayonnaise ingredients above. Mix till combined.

For roasted sweet onions + blistered tomatoes:
Preheat oven to 400 degrees. On a baking sheet, add tomatoes and onions rounds. Drizzle with 2 tbs olive oil, kosher salt, and pepper. Cook for about 8-10 minutes. Onions should be soft and slightly browned. Tomatoes should be soft and juicy.

For candied bacon:

For fried egg:
In a nonstick pan on medium low heat, add butter. once butter is melted, add eggs and cook for about 5 minutes till whites are cooked through and yolk is still runny. Remove from pan and set aside.

For sandwich:
In the same 400 degree oven place sourdough bread on a baking sheet. Drizzle with olive oil. Cook for about 5 minutes till bread is roasted

On one side of the bread, spread chipotle mayo. Place a handful of artisan lettuce on top of mayo. Take 2 pieces of candied bacon and place on top of lettuce. Place fried egg on top of lettuce. Put tomatoes and onions on top of bacon. Close sandwich with other half of sourdough toast and enjoy.
