PIZZA DOUGH

Say goodbye to store-bought dough and frozen pizza’s, because this recipe is all you need to have a homemade pizza night without the fuss. There is nothing better than homemade pizza done right. It took me a while to find the perfect balance of ingredients for a pizza crust. This dough is crispy on the bottom and chewy throughout. I’d pick this pizza over going out to a pizza joint for dinner any day of the week. It’s THAT GOOD. My mouth is watering just thinking about it.

One thing I would 100% recommend is purchasing a couple pizza peels and pizza stones. The peel will make it so much easier to transfer the pizza to and from the oven. The stone will ensure that crispy crust you look for in a good pizza.

PIZZA DOUGH

Prep time: 15 minutes

Total time: 1-12 hours (see recipe)

Makes: 4 small- medium pizzas depending on thickness

INGREDIENTS:

2 cups bread flour
1.5 -2 cups all purpose flour
1 envelope active dry yeast
1 teaspoon sugar
2 teaspoons kosher salt
1 1/2 cups warm water
2 tbs extra virgin olive oil

DIRECTIONS:

Preheat oven to 550 degrees. Place pizza stone inside oven.

Combine sugar, yeast, and water and let sit about 5 minutes. Make sure your water is not

too hot, if too hot the water will kill the yeast. In a standing mixer with dough cook, combine flour and salt on low. Slowly add in water and yeast mixture. Add olive oil. Turn speed up to high for 6-8 minutes. Take out and knead for a couple minutes and form into a ball. The texture should be slightly sticky but not sticky enough to stick to your hands or the counter.

Put in a greased bowl and cover with plastic wrap. Let rise at least 1 hour. Can let rise up to 12 hours.

Once risen, make 3 or 4 even balls with the dough. On a dry floured surface, stretch dough with your hands to desired thickness.

I also recommend purchasing a pizza stone and pizza peel. Let the pizza stone sit in the hot oven before adding the pizza. The hot surface will create a crispy bottom. A medium pizza takes about 9-13 minutes to cook. Keep a close eye on it while cooking since it’s at such a hot temperature.
