When I think of fried rice, I think of sitting around a hibachi table as the chef throws his knifes around in a mesmorizing trance. While he begins to cook and build the fried rice in front of me, the aroma of it all is mouth watering. As I watch in awe, one of my thoughts is, “how can I cook fried rice at home?”
Well, this recipe is my solution! Fried rice made easy at home – you’ll feel like you’re back at the hibachi table.

Although you definitely can use a large pan with tall sides to make this rice, I recommend getting a wok. My wok set is amazing and if you don’t already have one, its a great investment. I use mine constantly and it is one of my favorite tools in the kitchen. I got mine for less than $20!

BASIL FRIED RICE
Prep time: 15 minutes
Cook time: 10-15 minutes
Total time: 30 minutes
INGREDIENTS:
For vegetables:
2 large carrots, julienned
1/4 cup frozen peas
1 large yellow onion, large dice
2 tbs vegetable oil
For sauce:
1/4 soy sauce
2 tbs sweet soy sauce
2 tbs vegetable oil
1 tbs sesame oil
1 tbs oyster sauce
Other:
1/4 cup basil, chiffonade
5 cups cooked sushi rice (or short grain rice)
2 eggs
DIRECTIONS:
In a small bowl, add all sauce ingredients and mix together, set aside.
Heat a wok to medium high heat. Add in vegetables and oil. Cook for 3 minutes till vegetables are tender.
Move vegetables to the side of the pan to make a small open area. Crack both eggs in the empty space. Let eggs coagulate and stir occasionally.
Once eggs are almost cooked, stir into the vegetables and add in cooked rice. Mix and let sit for a minute in the hot wok. This will create a nice fried crisp on some of the rice. Add in sauce and mix around.
Let cook and stir occasionally for 3-5 minutes till all liquid is absorbed by rice. Turn off heat and add in chopped basil leaves. Serve hot.
