Sometimes even a good cut of meat could use a sauce. This blue cheese sauce compliments red meat in all the right ways. Theres something about a tangy blue cheese that really brings out the salty, decadent and juicy flavor of a steak.
This sauce is pretty straight forward and simple to make. The longest part about it is caramelizing the onions. If you’ve never caramelized onions, don’t get scarred off. It’s simple and I’ll walk you through the steps in my directions. The biggest part is just to be patient. They caramelize at a slow rate, but oh man is it worth it. The onions will shrink down measurably and become very sweet and soft. So tasty! Add in blue cheese and you’ve got a match made in heaven!

BLUE CHEESE AND CARAMELIZED ONION CREAM SAUCE
Prep time: 2 minutes
Total time: 50 minutes
INGREDIENTS:
1 medium sweet onion, cut thin
1 tbsp olive oil
3/4 cup heavy cream
5 oz. good quality blue cheese, crumbled
1 tbsp lemon juice
1/2 tsp pepper
1/2 tsp kosher salt
DIRECTIONS:
In a pan on medium heat, add onions and olive oil. Cook while stirring for 2 minutes. Reduce heat to simmer and cover. Every 10 minutes stir onions. As the onions cook and caramelize, they will shrink in size and the color will become a darker more brown color. After about 45 minutes, the onions will be caramelized.
Add in heavy cream and blue cheese, bring to a soft boil. Let cook till cheese is melted (should only take 2-4 minutes) and reduce heat to simmer. Add in pepper, salt and lemon juice.
Turn heat off and cover till being used.
