HONEY CHIPOTLE CORN

When it’s summertime, I can’t help but indulge in fresh sweet corn. It’s the perfect side dish to any meal and there is so many ways to prepare it. One great way I love to do corn is roasted on the cob with honey chipotle butter. With the bold chipotle pepper, heat from the cayenne, and sweetness from the honey, its a guaranteed home-run.

HONEY CHIPOTLE CORN

prep time: 5 minutes

total time: 20 minutes

INGREDIENTS:
2 tbsp honey
7 oz. can chipotles in adobo sauce (use 2 tbs)
4 tbsp salted butter
1/4 tsp cayenne pepper
2 ears corn

DIRECTIONS:

Preheat oven to 400 degrees.

For corn: Cook corn for 20 minutes with husks still on. Let cool for 5 minutes and peel husks back. Brush on honey chipotle butter and serve hot.

For butter: In a blender, add can of chipotles and adobo sauce and blend till smooth. Keep 2 tbs. and discard the rest.

In a small pan combine all ingredients on a medium heat till butter is melted and ingredients are combined, whisking throughout.
