My husband happens to be like a lot of men in this world in the fact that he loves a good meat and potatoes meal. Although he could never get tired of same potatoes again and again, i’m definitely guilty of growing bored over the same side dish. So I made it my mission to figure out multiple different ways to serve potatoes. These fingerling potatoes have such a good creaminess inside and crispy exterior. The herbs give it that extra punch of flavor it needs.
These potatoes are so easy to prep and throw in the oven, it’s almost effortless. Within 30 minutes you’ll have gorgeous fingerling potatoes on the table for everyone to devour. It’s a great side dish to serve the kids, or at a dinner party.

FINGERLING POTATOES
Prep time: 5 minutes
cook time: 20-25 minutes
total time: 30 minutes
INGREDIENTS:
24oz. bag fingerling potatoes
2 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp pepper
1 tsp dried parsley
1 tsp dried oregano
1/2 tsp garlic powder
DIRECTIONS:
Preheat oven to 425 degrees.
Cut fingerling potatoes in half lengthwise. In a large mixing bowl add potatoes, oil, and spices. Mix so that every potato has an even coating. cook in oven for 20-25 minutes till potatoes are tender and edges are crisp.
