BLUE CHEESE BRUNCH BURGERS

I’m a big blue cheese fan! Whether it’s on a a crunchy cracker, in a sauce, or on a sandwich, I love it. I think the blue cheese adds so much to your typical burger and gives it a bit of a tang you won’t find in your average cheese burger. the creamy blue is balanced out with the sweet caramelized onions, salty bacon, and fried egg. It’s the perfect sunday brunch burger, or a burger to impress guests with.

This burger reminds me of my husband and his family. My husband and I lived with his mother for about a year after Clay finished up school at Ole Miss. Within that year we shared plenty of meals together. Luckily, I have a wonderful mother-in-law who welcomed me into her home and has a love for cooking just like I do. With all the meals we shared together in her home, blue cheese burgers were a once a week staple. It was a definite crowd pleaser and the perfect sunday dinner. We’d usually fry up some homemade onion rings and toss a fresh salad to go with it. I have so many fond memories with the blue cheese burger. It’s something I’ll continue to make for my family for the rest of our lives.

BLUE CHEESE BRUNCH BURGERS

makes: 4 medium-sized burgers
prep time: 10 minutes
total time: 28 minutes

INGREDIENTS for burger meat:

4 oz. blue cheese, crumbled
1.5 lb. ground beef (80/20)
1 tsp kosher salt
1 tsp ground black pepper

DIRECTIONS:

Preheat grill to medium high heat

Mix together all ingredients in a large mixing bowl with your hands. Create patties one by one. Once the patties are made, take your thumb and push down slightly create a small shallow indent. repeat on every butter patty. This will insure that the burgers do not puff up in the center while cooking. Doing this makes a nice leveled burger patty.

Place burgers on grill and cook 5-8 minutes per side depending on how you like your burger.

Remove from grill and let rest for 5 minutes.


CARAMELIZED ONIONS

prep time: 5 minutes
total time: 1 hour

INGREDIENTS:

2 medium sweet onions
2 tbsp. olive oil
Pinch of salt

Remove skins from onions and cut each onion in half. Cut long even strips with each onion half.

Preheat skillet to medium heat.

Add in all ingredients to the skillet and stir onions for 2 minutes. Reduce heat to simmer and cover with a lid. Let onions slowly cook for 45-55 minutes, while staring onions every 15 minutes. The onions will be done when they are a golden brown in color and soft and sweet to taste.


BLUE CHEESE MAYONNAISE

prep time: 1 minute

INGREDIENTS:

1/2 cup full fat mayonnaise
1/4 cup crumbled blue cheese
Pinch of salt and pepper
1 tsp cold water

In a bowl, combine all ingredients. Serve chilled.

Fried bacon
Fried eggs
Fresh tomatoes
Artisan lettuce
