I love a good dip. They’re amazing on football Saturdays or even better at a party with friends. Dip is such a painless appetizer. If there is a table of dips at a party or get together, you can find me there majority the time. I’m a sucker for appetizers. With all the dips I’ve made, this goat cheese one is a favorite of mine. It’s tangy from the goat cheese yet rustic with the fire roasted tomato sauce. The two bold flavors marry in such beautiful way that it becomes irresistible.
HOT GOAT CHEESE IN FIRE ROASTED TOMATO SAUCE
prep time: 10 minutes
totaltime: 30 minutes
INGREDIENTS:
6 oz. goats cheese
1 14.5 oz. can fire roasted tomatoes
1 tsp. Kosher salt
1/4 tsp. Sugar
1/4 tsp cayenne pepper
1 tsp. Italian seasoning
1 tbsp tomato paste
4 cloves garlic, minced or pushed through a press
DIRECTIONS:
Pre-heat oven to 400 degrees.
In a small pot, add can of tomatoes, salt, Italian seasoning, sugar, cayenne, tomato paste, and garlic. Bring mixture to a boil then reduce to a simmer.
With a potato masher, mash tomato mixture till tomatoes are slightly mashed.
In a small baking dish or small cast iron skillet, lay goat cheese in the center. Carefully spoon tomato mixture around goat cheese log.
Transfer dish to oven and bake for about 15 minutes, or until tomatoes are bubbling and cheese is hot and slightly golden on top.
Remove from oven and let rest for 10 minutes. Eat warm with crostini’s or crackers.
