CANDIED BACON, BLUE BRIE & CARAMELIZED ONION PITA SANDWICH

Somehow I managed to drag my husband to the farmers market this Saturday. I scored a ton of my usually hard to find Asian ingredients and a bundle of good fresh breads. One of those breads happened to be a super fluffy and fresh pita bread. I could honestly eat it plain because it’s so good. My usual grocery stores pita does not even compare to this pita at the farmers market.

Anyways, I knew I had to do something tasty while this pita bread was fresh. I searched for other ingredients and got inspired by blue Brie cheese. If you have never had blue Brie then I recommend trying it. It’s a game changer. It combines the two cheeses into this creamy, mild yet pungent, tangy cheese that’s just out of this world. It is hands down my favorite cheese.

I decided to add some sweet candied bacon, caramelized onions and fresh arugula. The combination of everything works so well, you must try it. It’s like a really funky amazing version of a classic BLT and it’s to die for. Take my word for it.


CANDIED BACON, BLUE BRIE & CARAMELIZED ONION PITA SANDWICH

Makes: 2 sandwiches

Prep time: 15 minutes

Total time: 50 minutes

INGREDIENTS:

2 tbsp mayonnaise

1 block blue Brie cheese (I used Saga)

Candied bacon (see link in directions)

2 pieces of good quality white pita bread, cut in half

1 medium sweet onion, cut into thin strips

2 tbsp extra virgin olive oil

5 cherry tomatoes, cut in half

1 cup arugula

1 tbsp lemon juice

1 pinch of salt and pepper

DIRECTIONS:

Make candied bacon with recipe link above.

Wash and dry arugula and cherry tomatoes and place in a bowl. Toss with lemon juice and a pinch of salt and pepper.

Place onions and olive oil in a shallow pan on high heat. Sauté onions for about 4-5 minutes then turn heat to simmer and cover with a lid. Let onions cook for about 45 minutes on simmer, stirring them every 10 minutes. When the onions are done they should be very soft and golden brown in color.

Preheat oven to high broil.

Once you’ve cut both of your pitas in half, spread each half with mayonnaise. On each half of the pita, place strips of blue Brie across the surface.

Place all four halves of the pita on a baking sheet and place in the preheated oven for about 5 minutes. The cheese should be melted and slightly bubbling. The edges of the pita should be slightly crisp.

Take out of the oven and start to assemble the sandwiches. First put even portions of the caramelized onions on each bottom half of the pita. Then put candied bacon on top of that. Take a handful of the arugula and cherry tomatoes and place on top of the bacon. Close sandwich with top half of the pita and enjoy while hot.
