So I took some cues from my Instagram story questions the other night. Over the weekend I will be sharing some of my go-to healthy-ish recipes that I hope y’all will love! Starting with this Mexican-ish spring salad with a yummy cilantro lime jalapeño vinaigrette.
I love this salad because it’s very buildable. You can take away ingredients or add more ingredients you love. Personally, I love a salad packed full of different veggies and textures. On top of all the avocado, tomatoes, sweet corn, and bacon… you could also add other ingredients you love.
Some great things to add on:
- Crispy fried tortilla strips
- Black beans, drained and rinsed
- Crispy spiced chick peas
SPRING SALAD WITH BACON AND CILANTRO-LIME VINAIGRETTE
Prep time: 25 minutes
Total time: 25 minutes
Serves: 1 large salad, 2 side salads
INGREDIENTS:
For salad:
- 1 cup spring mix lettuce
- 2 leaves romaine, chopped
- 5 cherry tomatoes, sliced in half
- 1 tbsp cilantro, chopped
- 1/2 ear sweet yellow corn, cut off the cob
- 5 slices cucumber
- 1/2 avocado, diced
- 1/4 cup queso fresco (may also use feta)
- 2 strips bacon, cooked and chopped
For dressing: (whisk all ingredients together)
- 1 tbsp cilantro
- 1 lime, juice of
- 1/2 inch jalapeño, minced (can omit)
- 1/4 cup avocado oil, or vegetable oil
- 1 tbsp honey
- 2 tbsp red wine vinegar
- 1 tbsp white onion, minced
- Pinch of kosher salt and black ground pepper
DIRECTIONS:
- Place all salad ingredients in a large bowl. Toss with a tbsp or two of dressing (more or less to your liking).
