OATMEAL BANANA PANCAKES

I don’t make pancakes often so when I do it’s a total treat. I love banana pancakes more than anything but sometimes don’t love the calories or that heavy feeling that comes with it. These pancakes are so tasty but also pretty healthy for the most part (minus the drizzle of syrup and chocolate chips lol). There’s no flour or refined sugar added. They are naturally sweet from maple syrup and bananas. They are fluffy and have a great oatmeal taste from all the old fashioned oats added, which I love! I typically don’t lean towards “healthy comfort food” … since what’s the point of comfort food if you don’t indulge, right? Yet these are pancakes I’d make time and time again because they taste very indulgent to me. So much flavor and so much fluffy bounce to them… I’m obsessed.

OATMEAL BANANA PANCAKES

Prep time: 5 minutes

Cook time: 20 minutes

Total time: 25 minutes

Serves: 8-10 medium sized pancakes


INGREDIENTS:

+ butter or coconut oil for cooking (your preference)


DIRECTIONS:

  1. Place all the ingredients in a blender and blend till smooth, about 30 seconds. The batter will still be somewhat lumpy from the oats and that’s okay.
  2. Heat a nonstick pan to medium low heat. Melt in preferred oil and cook the pancakes in batches till all the batter is gone. (You can use a measuring cup/ladle to make each pancake the same size or simply pour batter straight from the blender).
  3. Serving suggestions: Fresh fruit like sliced bananas, strawberries, blueberries, raspberries, etc. Semi sweet chocolate chips, maple syrup or butter.
